Recipes: Blueberry crumb cake

This recipe is one of Matt's favorite sweet snacks. He's not usually into sweets, but this one is a win win! These don't last long in our house. As I am writing this, I already wanted to make some. 

  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1/3 cup milk
  • 1 egg
  • 1 cup fresh blueberries
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup butter, cubed
  • 1 1/2 teaspoons ground cinnamon
Preheat the oven at 400 degrees. Combine the flour, white sugar, salt, and baking powder. On a separate bowl mix the milk, vegetable oil and egg. Slowly mix the dry ingredients with the mixture. Once combined, fold the blueberries in the mixture and place it in a loaf pan. Make the crumbs to put on top. combine sugar, flour, butter and ground cinnamon. Sprinkle to toppings on top of the loaf and bake for about 45 minutes. 



  1. Oh delish this is! I can't help but feel the fragrance of this fresh out of the oven cake. I wish i could have it right away. better hit the kitchen and make it for my afternoon tea
