Recipes: Cast Iron Lamb


Since I've started working from home, I have more time to cook for us. We try to have dinner together most days if Matt does not have to stay long hours in the office. Here's one of the recipes I made for a nice summer dinner in the backyard.

Ingredients:

Lamb rack (Costco has a great selection)
Black pepper
Salt
Fresh parsley (chopped)
Herb of Provence

Combine all the ingredients together except half of the amount of parsley. Let the meat rest for a about 10 minutes before cooking. I used my cast iron pan to cook the lamb in medium heat. No additional oil was used since the lamb was rich in fat. You can also add a little lemon to break down the fat.  Garnish it with fresh parsley as well.
